Sushi Rocks My World

Japanese cuisine became popular in my country not so long time ago. Within several years it was possible to observe how the menu of every second restaurant is replenished with  Japanese sushi, sashimi and rolls. They are being served not only at the Japanese-cuisine-type restaurants but also at any restaurant, pub, or café, which would like to attract more customers.

Through the West to the East

It is remarkable that such interest to Asian delicacies came to us not straight from Japan, but “through the West to the east“. Indeed! Firstly, Japanese exotic food was tasted in Europe and USA, and only then was found on the Eastern Europe countries’ plates. According to the Japanese phonetics one should pronounce “susi”, but having undergone a certain adaptation in the West, this name came to us as “sushi”.

This tasty food was founded more 1300 years ago.  Its name “sushi” (in Japanese 寿司 ), oddly enough, has no translation yet. Or, more precisely, there is such set of interpretation of two hieroglyphs that it can be successfully treated as both a «marinated fish» and a happiness wish. As often happens, any dish origin history is related to its way of storage.

Narezushi or Salted Fish

Sushi originates in a Southeast Asian dish, known today as narezushi (馴れ寿司, 熟寿司 – “salted fish”), stored in fermented rice for possibly months at a time. The lacto-fermentation of the rice prevented the fish from spoiling; the rice would be thrown away (how wasteful!) before eating fish. This early type of sushi became an important source of protein for its Japanese consumers.

Samurai, nigirisushi, sticks

The sushi master Dzhokhey (only representatives of Samurais had the right to use the surname) was the first one who cooked a rice ball, then added wasabi (the Japanese horse-radish was known as the best antiseptic) and covered it with a piece of fish. The dish was named as nigirisushi. Nigiri in Japanese means “handful” denoting the amount of rice that can be eaten at once.

People love eating sushi with sticks. Sticks are difficult in use for many, but not for those ones who learned how to deal with them. I shall say that Japanese cuisine offers food served mainly in the form of small separate pieces (sushi, sashimi) which are enough to be picked and put in a mouth. 3

Sushi are very low-calorie food. It would seem that sushi cannot do harm to health? At a first glance, everything looks pretty innocent – a small portion of rice, sea fish and vegetable ingredients. Let us take a closer look.

Sushi can be useful to our body as it contains:

sea fish includes fat-soluble vitamin D, a nutrient that most people are deficient in. It functions like a steroid hormone in the body. Researchers believe that the fatty types of fish are even more beneficial for heart health, because of their high amount of omega-3 fatty acids;

rice acts as fuel for the body and aids in the normal functioning of the brain. Rice is an excellent source of vitamins and minerals like niacin, vitamin D, calcium, fiber, iron, thiamine, and riboflavin. These vitamins provide the foundation for the body’s metabolism, immune system health, and  etcetera;

recent studies suggest that soy sauce may be able to provide some digestive tract benefits;

wasabi contains antimicrobial agents which are useful for eliminating bacteria. Due to its ability to block platelet aggregation, wasabi helps to reduce chances of heart attack and stroke;

ginger is the strong antioxidant and also an immune-stimulator;

However, one should always keep in mind that not all sushi ingredients are beneficial to our body. For example, nearly all fish have traces of methylmercury, a form of mercury that has neurotoxic effects, especially in developing brains. Salt-sensitive people should be careful with soy sauce since it is widely regarded as salty food, a tablespoon of soy sauce contains 1,000 milligrams of sodium. Also be aware of the fact that all seafood ingredients of sushi MUST be fresh.

To Eat or Not to Eat?

If you are not allergic to any of sushi ingredients and have no serious diseases, then go ahead and taste it. This food might “conquer” or not your taste receptors, but you will not remain indifferent. Nobody can tell for sure why Japanese people live longer than many Europeans, some say that the secret lies in their daily food habits.

2018 A New Start

Hello, my dear little Friends,

We have not talked since last year. Wow! How were your Christmas holidays? Did you find many presents under your Christmas tree? I did.

2018 is here, not sure I am ready to it. A new year means a new start to many of us. We hope that new year will be better than the old one. We make new resolutions and set new goals. Right? I have mine as well. I keep bugging you about my book that had to be published last year and volla…it was not. Actually, the largest obstacle was the editing process. You have no idea how difficult it is to find a good editor. Fortunately, I came across kind people who directed me in the right way.  The editing process has been launched. And now I try to sell my photos to gather money to pay my editor. I know that sounds weird, but on the way to my dream I might be a bit reckless…

You know how much I love making videos, but I found out that filming lovely places around the world is even more exciting.

At present,  vlogging is the hobby available for everyone who has a simple camera and an account on Vimeo or YouTube. The number of passionate travelers who discover this world through their cameras grows as fast as mushrooms after rainy days. Moreover, almost everyone tries to learn the best video editing technique and even buy a drone, which transforms a passionate hobby into a high-quality ad. But, many of them, after some time, offer the content that might be a lack of novelty. They always talk and share perfect hotels, resorts, exotic food, etc. They went to advertising that brings them money and their hobby transfers to work, their childish reaction to every new comment under videos converts to tiredness…I would not like to be such a person one day. My videos are too important to me. My purpose is to be always fresh and new, maybe not too perfect, but thought-provoking. That’s why I am working on it. That’s why I like it…

Saint Nicholas and Toys

In every country there is their own Santa or Nicholas who comes to children, while they are sleeping, and leave some presents for them.

Hope many of you know that his name is of Greek origin and means “victor of people”. It suits him, right? Perfectly.

Some of you might still doubt whether he existed.  Nicholas was born in Patara in A.D. 270 and served as Bishop of Myra, both seaport towns off Turkey’s southern coast where he lived all his life (and died in 345).

St. Nicholas’s anonymous gift-giving originated in his hometown of Patara in Turkey.  According to ancient tradition, the young Nicholas secretly threw three bags of gold coins through the window of a widower father and his three daughters on three consecutive nights to help them. His anonymous nocturnal gift-giving has continued in many countries to today, including being translated into Santa’s visits.stock-photo-dalmatian-puppy-ceramic-statue-and-penguin-toy-on-black-background-750861118

Christmas Photography

Christmas is the most interesting topic to photograph. However, be aware that making pictures of your Christmas tree needs the knowledge of some details. I am not so experienced yet and I am learning how to do it.

Outdoor photography at night requires a tripod – obligatory! It’s the only way to guarantee a crisp shot for your long exposures. It is recommended to forget your flash since your flash could interfere with the lights’ color.Now the main parameters.

It is said that we should start with ISO as 400. If our photos are too dark, increase it, but know that any increase to the ISO will degrade image quality. Your aperture should be f/8. It is always good to keep in mind that the lower numbers bring more light, while the higher -less.

Christmas-4When you need more light, increase the exposure time (slow shutter speed). We have to use macro lenses with the lowest aperture. In case you would not like to use manual, then put your camera on aperture priority and set the lowest f number your lens will allow, for example f/2.8 up to f/4.6. When using aperture priority, make sure automatic ISO is turned off.    You do want to choose this setting yourself, so you can keep it to around 400 ISO. ANN_4778

Autumnal Flashes of Yellow

My dear little Friends,

Days come and go fast, before I knew it, these pictures all I had from October. And yet October was very generous for scenes to admire and to capture. Before having a plunge into the world of still image I have been not enough attentive to unique beauty of Fall season. Nowadays, every picture I made allows me to look at this amazing world with my eyes wide open and my Nikki set to shoot.

Photos have a great influence on me. Love to still picture has been genetically coded in my DNA. My grandpa was passionate about photography, he not only made photos, but also photo prints. One of the brightest autumnal flashes of my childhood is the dark room, or better to say, dark kitchen at my aunt’s home where my grandpa and we, his grandchildren, were “washing” photos and then “hanging” them on a usual laundry rope. I think I was a real kid yet. It was so funny to watch images through wet prints drying on this rope…

Well, it’s been a long time. My grandpa is not with us anymore, but I found my way to photography. Nowadays I am learning and try to improve my photos. Recently, I’ve purchased mini-light photo studio for macro photography and downloaded my first “masterpieces” to my shutterstock: https://www.shutterstock.com/g/anrostudio?language=en

I felt the flavor of marketing photography and scenes arrangment. It does not look too simple as I might imagine. However, challenge is accepted, and I have nowhere to retreat, right?
